Hi there all, My name is Linda and I blog over at WITH A BLAST all the way from sunny South-Africa! Any other South-African readers here? Anyways, I write posts about DIY's and recipes, some which are traditional to our country and others from all over the world... feel free to visit at any time. Thank you to Leslie who is having me over today, it is fun to be here! So, today I am sharing a recipe for a side dish with you - there are loads of recipes for main courses and even more dessert recipes all over the net, but it seems side dishes {excluding starches} are a bit neglected.
Green Beans & Tomato {side dish}
6 side servings
500g Green Beans, ends clipped off and cleaned
350g Cherry Tomatoes {Italian style is very nice}
2 t Garlic, crushed
Salt & Freshly Ground Black Pepper, to taste
1/3 cup Olive Oil
2 TB Balsamic Vinegar
1.) Place the Green Beans in a medium saucepan, cover with water and boil for 5 - 10 minutes {the beans must still be crunchy} - drain and return to the saucepan.
2.) Add the Tomatoes, Garlic, Salt & Pepper, Olive Oil and Vinegar to the Green Beans.
3.) Heat through - I like to keep it on medium heat for about 2 minutes.
Stir gently during the 2 minutes of final heating
Serve immediately with your preferred main meal!
I hope you will enjoy this dish as much as my family does.
Linda
